Thai Stir Fry

Serves 6

1 Pack Fry’s Vegetarian Golden Crumbed Schnitzels
Half Cup Rice, Cooked
3 Onions, Chopped
10 ml Crushed Ginger and Garlic Mix
6 Tsp Green Curry Paste
2 Tins Coconut Milk or Coconut Cream
2 Tblsp Peanut Butter, Heaped
Half Red Pepper, Chopped
Half Green Pepper, Chopped
Quarter Pineapple, Chopped
1 Stick Celery, Chopped
1 Tsp Chinese 5 Spice
Handful Peanuts
1 Tsp Sugar


Grill Fry’s Vegetarian Golden Crumbed Schnitzels and cut into pieces. Sauté onions in ginger and garlic until lightly browned. Add curry paste and coconut milk. Allow to simmer until coconut oil rises to the surface. In the meantime – Sauté red and green peppers, pineapple and celery and add to cooked rice. Add Chinese 5 spice.
Stir in peanut butter, peanuts, sugar and Schnitzels to onion mix. Serve Schnitzels on bed of prepared rice.
