Pomodoro Pasta
Serves 4

Pasta of your choice
1 box Fry’s Chunky Strips1 garlic, crushed1 onion, chopped6 fresh tomatoes, skinned and chopped115g tomato paste (small tin)400g peeled tomatoes (large tin)Salt and pepper to tasteSugar to taste80 ml red wine1/4 cup fresh basil, choppedBasil pesto50g pinenuts, toasted

Sauté onion and garlic in a little oil until softened. Add fresh tomatoes, whole peeled tomatoes and tomato paste. Cook until combined, check seasoning and tartness. Add sugar to taste and red wine. Add fresh chopped basil. Fry Chunky Strips in a little oil for 6-8 minutes until browned and crispy. Add Chunky Strips to sauce.
Place pasta in serving bowl and top with sauce. Garnish with toasted pinenuts. Serve with small bowl of pesto
